Areas of interest

Vic’s research sits at the Sensory, Consumer and Nutritional Sciences interface and to date key areas of focus include:

  • developing protein/fibre rich foods and evaluating their corresponding sensory profile, consumer acceptability and instrumental analyses to ensure suitability (including for targeted populations)
  • exploring the role of individual differences on modulating food intake and perception
  • developing educational materials and investigating subsequent impact on consumers behaviour across the life-course
